Country Funnel Cakes... MMM Good..

MMM good.. Summer always brings images of the County fair Corn Dogs and Funnel cakes. this is a recipe for fun funnel cakes at home..
First you will need approximately three cups of oil. I use a fry daddy but you can use a simple frying pan on the stove as well..
I also use Peanut oil but a good olive oil or just plain vegetable oil works as well.
The second thing is the recipe..
My recipe calls for
2 cups of Flour
1 Cup of whole grain flour ( wheat is my favorite sifted if you grind it yourself)
4 Eggs
2 cups of milk
1 tablespoon of baking powder
1 teaspoon of baking soda
a pinch of salt
1/2 cup of oil.
1 tbsp of vanilla
1/2 cup of buttermilk powder ( or one cup of the milk is buttermilk and one cup of regular white milk)
1 cup of sugar
cinnamon to taste ( I use 1 tbsp.)
First you take all the dry ingredients and put in a bowl mix together and make a well ( indentation in the center) to this you put in the oil and eggs now mix that into the dough till it gets mixed in really well then slowly add the milk. you will want this to be a little thicker than pancake batter and may have to add a little more milk. to get to get it mixed. Once it is mixed I add the Vanilla to the mix. you can vary the mix by adding a dash of nutmeg to it to.
Let it breath a few minutes while you heat the oil once the temp is up. to test the temp put one drop of water to the oil if it  pops you are good to go or set your fryer to 350
Now take a small funnel ( about a third to a half cup of batter and fill the funnel up..
now let the batter slowly swirl out fry your cake for approximately three minutes per side then drain on a paper towel and sprinkle with powdered sugar..
